Homemade Chicken Pot Pie
Ingredients:
- 2 cups cooked, shredded chicken
- 1 cup frozen peas and carrots
- 1/2 cup diced onions
- 1/3 cup butter
- 1/3 cup all-purpose flour
- 1 3/4 cups chicken broth
- 1/2 cup milk
- Salt and pepper to taste
- 1 teaspoon garlic powder (optional)
- 2 pre-made pie crusts (or homemade, if preferred)
Instructions:
- Prepare the Filling
In a large saucepan, melt the butter over medium heat. Add the diced onions and cook until they are soft and translucent, about 3-5 minutes.
Stir in the flour and cook for another minute to create a roux. - Make the Sauce
Gradually whisk in the chicken broth and milk. Bring the mixture to a simmer and cook for 5-7 minutes, or until it thickens. Stir occasionally. - Combine Chicken and Veggies
Add the shredded chicken, frozen peas, and carrots to the saucepan. Season with salt, pepper, and garlic powder. Stir everything together until fully combined and heated through. Remove from heat. - Prepare the Pie Crust
Roll out one of the pie crusts and place it into a 9-inch pie pan. Press the crust into the pan and trim any excess dough hanging over the edges. - Assemble the Pie
Pour the chicken mixture into the pie crust. Place the second pie crust over the top and seal the edges by pressing down with a fork. Cut a few slits in the top crust to allow steam to escape. - Bake the Pie
Preheat the oven to 375°F (190°C). Bake the pie for 30-35 minutes, or until the crust is golden brown and the filling is bubbly. - Serve and Enjoy
Allow the pie to cool for a few minutes before serving. Enjoy the comfort of this homemade chicken pot pie!
